History Of Tea
The history of Tea goes back to 1824 when the British decided to bring a tea plant from China to Sri Lanka. This plant was planted within the Royal Botanical Gardens, Peradeniya. This was considered to be one of the fist non-commercial Tea Plantation in Sri Lanka.

Later in the year 1867, James Taylor arrived in Sri Lanka and planted nearly 19 acres of Tea at the Loolecondra Estate within the city of Kandy. The Sales began to pick up only in the year 1872 and over the years Tea production and plantation in Sri Lanka had improved tremendously.

Later in the years 1894-1925 two organizations (Colombo Tea Trader’s Association and Tea Research Institute), formed to assist in the boost of Tea Production and to help the country export Tea to other countries.

Tea Making Process
The process of producing tea has a series of steps that has to be followed to ensure that the best flavor is produced. Tea is mainly harvested by hand but not all the leaves are plucked but the younger ones. Here are the steps involved in Tea Production:
  1. Withering:

    At this stage the leaves are put onto long tables which contain a mesh that would often have a ventilation system built beneath itself. Since most of the young tea leaves have some moisture in it, the ventilation system would reduce the moisture by about 60%. Withering is considered to be of the critical stages.

  2. Rolling:

    After the withering stage is completed, the rolling process happens. This is where the leaves are put into a rolling machine that would twist the tea leaves and thereby the juices within the leaves are exposed to air. In order to get optimum results, this process would often require a high amount of expertise. Once this is successfully done, then the fermentation process would begin.

  3. Fermenting:

    Once the withering and rolling stages are completed, it is time for the most crucial process which is the fermenting process. This process will consume a lot of time, mostly 3-5 hours. At this stage most of the bitter taste is eliminated and that particular tea’s actual flavour is gradually revealed.

  4. Drying:

    This process usually takes about 25 minutes and is also crucial for the production of high-quality tea. Here the tea leaves are placed in an oven like machine that heats up and dries the tea leaves until they get their dark color. The moisture is further reduced in this process to make sure that the tea leaves can last long.

  5. Sorting:

    This is the final step of the tea production. Since there are different Grades of Tea, it is vital to organize and sort the Tea leaves accordingly. Once this stage is done the factory workers would do a final check and the Tea is now ready for packaging and distribution.
